First round of cooking with Kat starts with something I’ve wanted to try for a while now: Antojitos!  James has been raving about them (specifically the ones from Montana’s) about as long as I’ve known him, but I only got on the bandwagon last year. I never disliked them, but they weren’t my first choice for an appetizer.  But then I had a particularly good order – crispy outside, slightly spicy, cheesy goodness. Yummmm.

I realized this would be an easy thing to make at home; so I bought the ingredients and set out to make that as a lunch snack! I checked a couple recipes on the internet (here, here and here) and ultimately came up with my own because they all weren’t quite what I wanted.  Only thing I might change up for the next batch is adding a bit of hot sauce, because the spice level was essentially non-existing.
